Pancakes, anyone?

These healthy pancakes are sugar free and can easily be made vegan and/or gluten free. But more importantly, they taste delicious! Kids will gobble them up, never the wiser that they're good for them!

Ingredients:

  • 1/2 cup wholemeal spelt flour
  • 1/2 cup buckwheat flour (if you’re gluten free, make it with 100% buckwheat flour)
  • 1 cup milk (I used oat milk, but rice, nut or coconut milk would work nicely too)
  • 2 teaspoon baking powder
  • 1 teaspoon vanilla essence
  • Pinch sea salt

Steps:

Mix the dry ingredients, and add in the milk and vanilla essence.

Stir well then allow to mixture to sit for 10 minutes

Stir again and then you’re ready to make pancakes!

Serve the pancakes with toppings of choice, I really like bananas but you can use whatever makes you smile in the morning!
